  • 2 lbs boneless, skinless chicken thighs

  • 1 tbsp minced garlic
  • 1 tsp ground ginger
  • 1/2 tsp black pepper
  • 1 cup diced bell peppers (red, yellow, or green)
  • 1 cup diced onion
  • Cooked rice (for serving)
  • Chopped green onions (for garnish)

 

Instructions:

  1. Add Chicken to Crockpot:
    • Place the boneless, skinless chicken thighs in the crockpot.
  2. Prepare the Sauce:
    • In a mixing bowl, whisk together pineapple juice, soy sauce, brown sugar, honey, minced garlic, ground ginger, and black pepper until smooth.
  3. Combine Ingredients in the Crockpot:

  4. Cook:
